- French brandy from the Cognac area, in the South-West of France
Cognac area officially defined in 1909
These belts form the six ‘crus’, from which cognac can be made
For brandy to be called cognac, it has to be produced only in this particular area
The Cognac region is made up from six ‘crus’, as laid down by the further decrees of 1936 and 1939
Rémy Martin only uses grapes grown from within the two finest crus; those nearest the heart of the region, Grande Champagne, and Petite Champagne: these two regions form the ‘Fine Champagne Cognac’ Appellation
The conditions for ‘Fine Champagne Cognac’ Appellation:
All grapes from Grande/Petite Champagne crus
A minimum of 51% of grapes from the Grand Champagne cru
The white grapes are harvested in the beginning of October
Fermented grapes are distilled between November and March of the following year to become ‘eaux-de-vie’
These ‘eaux-de-vie’ age in local Limousin oak barrels, and are blended to become cognac
Limousin oak imparts the distinctive vanilla flavours, aromas, and deep amber colour

Subtle, smooth, good balance; a pleasant harmonious bouquet, flowery, nutty, vanilla
